There's nothing better than the taste of homemade granola (not to mention the sweet cinnamon smell that fills your house). This recipe is a compilation of several recipes I've made in the past, and there's no sugar in it so its healthy right??
Ingredients
4 cups old fashioned rolled oats 1/2 cup ground flaxseed
2 tablespoons of chia seeds 1 cup unsweetened coconut flakes 1 cup slivered almonds 1 cup slivered pecans 1/2 cup raw sunflower seeds (or pepitas) 2 cups dried fruit (I always use dried cranberries) 1 teaspoon ground nutmeg 1 tablespoon ground cinnamon 1/2 teaspoon salt 6 tablespoons coconut oil 6 tablespoons organic clover honey 2 tablespoons organic pure maple syrup 1 tablespoon vanilla (splurge for the good stuff, it tastes 10x better)
Step 1: Preheat the oven to 300 degrees.
Step 2: Add all the dry ingredients to a big bowl and lightly mix them together.
Step 3: In a small saucepan, add the coconut oil, honey, syrup, and vanilla. Heat and stir until blended. Don't bring all the way to a boil.
Step 4: Add the oil mixture to the dry bowl and stir until all the oats are coated.
Step 5: Spread mixture onto two baking sheets lined with parchment paper and bake for 40 mins. Rotate the pans at 20 mins.
Store in an airtight container!
